Avocado is a non-sweet fruit, definitely not like a peach or plum! My husband sprinkles salt on avocado. Probably a chef in a fancy restaurant would use sea salt and/or freshly cracked pepper. It has good fat and fiber. I haven't bought any this year, but been thinking about it. Why am I always thinking about food? lol

We use avocados here in Texas very often. Guacamole has a lot of good stuff in it! I use avocados for smoothies and in salads. They also make a great chocolate pudding!

There are many recipes for making pudding and many other desserts with avocados. I tend to look at the more healthy recipes, which for me are more along the lines of paleo. So I copied one of them here, but if you google pudding made with avocado, you'll get all kinds of recipes for brownies, shakes, etc. using that wonderful, green fruit that is so good for us.
1 medium avocado, ripe
2 Tablespoons unsweetened cocoa powder
2 Tablespoons honey for Paleo diet OR 2 Tablespoons agave nectar for vegans
6 Tablespoons almond milk
optional: pistachios or other nut for topping
METHOD
Cut open the avocado and scoop out the pit. Cut it into large chunks and put in the blender. Add the cocoa, honey or agave, and almond milk. Blend, starting on low and then moving to high speed until it is smooth.
If the avocado is larger, you will need a bit more of each ingredient. If it is too thick, drizzle in a bit more almond milk. Add more cocoa or honey or agave to taste. Refrigerate the pudding and serve cold. Top with pistachios or other nuts. Enjoy!

Just made this, but can not do honey nor had agave- had to use Nectress...added a tablespoon of coffee (liquid)- now I need to figure the carbs! Tasted a tiny bit- yum!

Same here as the diabetes doesn't like agave or honey, so I use stevia, xylitol or monk fruit. The first two are the best, but I do like the monk fruit's taste. I get a brand called "Monk Fruit In The Raw." It has less than .5 carbs per tsp. I can live with that. The Monk Fruit is mixed with maltodextrin (probably from corn), so that's where the slight amount of carbs come from.
