It seems that I have been low in my calories since I was ill. I just don't feel like eating that much. Usually, I eat raw veggies at dinner. On some days I don't want to eat my veggies, so I cook them in the microwave for 30-60 seconds to soften them up and make them easier to chew. I'm such a baby. lol

I eat most veggies cooked unless I'm doing a salad. Baby carrots, cauliflower, jicama, or pepper slices sometimes raw for a snack. Eating stir fried veggies an tofu atop rice noodles for dinner in a Chinese noodle bowl. So good, quick, maybe 20 minutes total. I bought a package of fresh rice noodles from a Vietnamese store made with only rice flour and water. They are good.

I have read that raw veggies can be hard on the liver - and I'm embracing that reading to give me a scientific excuse for steaming mine! LOL. I cannot taste them as well when I'm concentrating on chewing. Weird. I try to avoid the micro as I've also read it depletes nutrition so a pan w/a little water on the stove is my go to.

Bella, I am going to have to steam my baby carrots. It's a matter of time. I am such a big procrastinator. I know I should do something, but I put it off. The only thing I am not procrastinating about is my walking. uh, and my eating. lol

If you have a steamer insert try that and steam them, keeps the flavor nicely and the nutrients aren't leached into the water. I have 3 kinds, a little Chinese bamboo one (would like a bigger one), a metal expandable one ( it fits perfectly in a farberware frying pan or in a wok with the cover), and the steamer insert that fits in one of my pans. I also have 2 metal strainer baskets that work as they have a stand up base and fit in larger pans. Just be careful that the pan doesn't boil dry, I'm good at doing that :))

FYI many cultures rarely eat veggies raw but do lightly cook and season them and eat them cold or at room temp. You see that a lot in oriental, French and Italian cooking.

I have seen some recipes where chopped cucumbers and sliced radishes are cooked with other ingredients. I have never tried that. We always eat cucumbers and radishes raw. I have the old metal steamer that works just fine, but I have put two new ones on my wish list. I might order one of those in future. :)

Yup there are a slew of steamer options, even electric ones. Had an electric one in an old life with three tiers, worked pretty well. I love my Farber Ware sauce pan with the steamer pan that first on top, used it for shrimp tonight. Super quick, easy to clean, right size for one or two.
